A very simple approach to this could be having a spider crawling through your site and save the html into a directory.

Regarding the Umbraco -> PDF solution you could look into using XSL:FO (formatting objects) and maybe the free altova xml processor.

We have used xml:fo to create invoice-copies in PDF from the contents of our customers SQL databases. First we generate the xml from sql server with the "for xml explicit" sql keywords - and the next step is using xsl:fo as a "pdf" styling of the generated xml document.
